We select only large wild Atlantic mackerel for our Cold Smoked Mackerel. Each fish is carefully cleaned and prepared, with all unnecessary parts removed. After a slow cure in salt and traditional spices for several days, the mackerel is cold-smoked for 12 hours using natural wood smoke.
