Garlic sausage is made in a rural style according to a very old recipe. This is how Ukrainian villager made pork sausage during the meat harvesting season.
They cut the pork meat (not ground it) into pieces with knives, added simple spices - salt, pepper, garlic, herbs and stuffed it into pork casings. Then they smoked it in hot smoke.
